Day 2 of 365 Days of Health. So far so good. Breakfast was a banana-blueberry-orange juice smoothie with ground flax seeds and protein powder. The green canister is the *only* protein powder I can use, everything else makes me gag :( with the chalky consistency and fake chocolate or vanilla taste. Blech. This healhty living thing is hard enough to do without having to choke down that stuff. But I digress....
Lunch was the above pictures huevos. I picked a few green beans from the garden (I *love* saying that and I am sure you will grow very tired of me saying that, sorry!), did a quick saute then cracked two eggs over them, cooking to over easy. I love my runny yolk :) If you are following the paleo diet, this is definitely paleo without the tortilla.
On the other gas burner, I gingerly toasted an all corn tortilla flipping it back and forth quickly before it set off my fire alarm. I spread a teaspoon of goat cheese on the tortilla and slid the eggs (need a good non stick pan for this, these are my favorite!) onto the tortilla. When I poke the yolk - say that 3 times fast ;) - it oozes all over the agg and tortilla - pure unctuous deliciousness. All in it took about 5 minutes.
For exercise, I didn't hit The Hill, but I did hit my treadmill, not really enjoying it but always feeling good after. I walked at a pretty good clip for 30 minutes including 5 minute warm up and cool down, so really 20 minutes of serious cardio. Then some stretching on my foam roller.
Snacks, you ask? When I work from home I tend to find myself starting into the fridge more often than not so controlling the snacking is beyond challenging. This afternoon, I did get actually hungry and chowed down a handful of Mary's gluten free crackers to silence the growling. Love these! Side note: letting myself get hungry and experience hunger is something new too :) I am always throwing some crackers or a handful of nuts or a pound of chocolate ;) in my mouth so I'm focusing on eating when I am actually hungry and not triggered by stress or habit. Good luck with that one!
Dinner, not sure yet but it will be simple. Most likely chicken breast, some greens from the garden :) and maybe a heaping of quinoa. Bon appetit!
